Biju's Little Curry Shop partners with Whole Foods Market

Local chef Biju Thomas stays true to his roots while bringing in a new twist on traditional South Indian food. As you may know, Biju's Little Curry Shop has locations in the RiNo and Berkeley neighborhoods of Denver. Their locations are always packed and the food is always tasty. But Biju's Little Curry is growing! Biju has partnered with Whole Foods Market to open locations inside the stores in Boulder (Pearl Street) and Denver (Tamarac).

The Whole Foods Curry Shops serve popular menu items such as the Vegetarian Combo, Vindaloo Chicken Bowl, Masala Beef, Coconut Curry Chicken, and Naddan Bowl. In addition to the classics, there is a new and special dish that you can only get at the Whole Foods locations and that is the Masala Dosa Waffle (pictured below).

This dish is truly innovative and one of a kind. Instead of making a standard crepe-like Dosa, Biju uses the Dosa batter to make waffles. The waffles are crisp but soft and have an amazing savory taste that compliments the flavors in the Masala so well. This dish is vegan and can be enjoyed by all. Eating healthy doesn't always have to be boring! This dish explodes with flavor and definitely has a spice factor. The flavors are traditional, yet different and truly creative.

You can stop by Whole Foods Market this week to meet the man behind the dish, as he will be serving his new creation in celebration of the opening.
